Trying out Blogilates Baked Donuts

I’ve been craving something sweet, so I whipped up some donuts using Blogilates’ recipe!

Ingredients:

  • 3/4 c. oat flour
  • 1 small ripe banana, mashed
  • 2 eggs
  • 2 Tb honey
  • 1 Tb coconut oil, melted
  • 1/2 tsp vanilla extract
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • pinch of stevia

Frosting:

  • 3 Tb vanilla Greek yogurt
  • 1/2 ripe banana, mashed
  • pinch of stevia
  • 1 tsp beet powder

After preheating the oven to 325°F, I coated the donut pan with cooking spray. Then using an electric beater, I mixed together the oat flour, mashed banana, eggs, honey, and coconut oil. After I added the vanilla, baking soda, salt, and stevia and then mixed everything together. Spooning the donut mix was pretty messy, but I love how there was just enough mix for the pan! No wasted dough 🙂

While the donuts are baking in the oven for 9 minutes, I whipped up the frosting. The beet powder gave it a beautiful reddish-pink color, and the Greek yogurt that I used (Tillamook) gave it such a yummy flavor!

Once the donuts were baked through (used a toothpick to test it out–if it comes out clean, you’re good to go!), I let them cool, frosted it, and then topped it with some mini chocolate chips and berries :9

They’re delicious, too! Another thing that’s great is that regular donuts usually leave a heavy, bloated feeling in my stomach. But after eating these, I feel comfortably full. They have the perfect amount of sweetness and density compared to regular donuts. So if you’re craving something sweet, try this recipe out and let me know how it goes! 🙂
